The course is delivered one day a week, for some of the rest of the week you will be expected to:

- Work within the food industry
- Undertake independent studies including working on your coursework.

Your course will begin earlier in the academic year than the typical University course. You will also finish later to ensure that you have the taught sessions required.

You will experience a range of learning and teaching methods. As well as traditional lectures and tutorials you will undertake practical work in our food processing laboratory and chemistry laboratory. Visits to commercial businesses are also arranged.

Programme structure

Food Processing Technology
Develop your understanding and knowledge of a range of food processing technologies. Topics include high-pressure processing; heat processing; freezing, chilling and controlled atmosphere preservation; and packaging. You’ll also look at the scientific principles underpinning these processes and their impact on food production, quality and safety.

Biochemistry of Food Processing
Study the biochemical aspects of food processing, both beneficial (e.g. fermentation processes) and detrimental (e.g. food spoilage). Genetically modified (GM) crops and microbes will also be explored.

Advanced Product Development
Consider the stages involved in the development of a new food product from specification design and cost analysis through to packaging, labelling and marketing. Understand the various constraints within which new food product development takes place.

Carry out independent research, under supervision. Focus on your own area of interest within the food industry, including understanding the commercial and political environment in which the industry operates, and the integrated nature of the supply chain.

Career opportunities

It is likely that you are already employed in the food industry. Successful completion of the BSc (Hons) Food Science and Technology top-up degree will assist your career progression to management levels in an industry that has a real need for food science and technology graduates.
